Ingredients

  • 2 cups whole wheat pastry flour
  • 1/4 cup Sucanat
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 teaspoons cinnamon
  • 1 teaspoon ground ginger
  • 1/4 teaspoon ground nutmeg
  • 1/4 cup avocado oil
  • 1 egg
  • 3/4 cup vanilla yogurt (dairy or non-dairy both work)
  • 1/2 cup honey
  • 1 1/2 cups shredded carrots
  • 3/4 cup chopped pecans

Instructions

  1. Preheat the oven to 350 degrees. Lightly grease a 9-by-5 inch loaf pan.
  2. In a large bowl, whisk together the flour, Sucanat, baking powder, baking soda, salt, cinnamon, ginger, and nutmeg.
  3. In a separate bowl, whisk together the oil, egg, vanilla yogurt, and honey. Stir in the shredded carrots.
  4. Add the wet to the dry and mix with a wooden spoon until just combined. Do not overmix.
  5. Pour the mixture into your loaf pan and top with the pecans.
  6. Bake in the preheated oven until a toothpick inserted comes out clean, about 40 minutes.

Notes

*Melted coconut oil will probably work in place of the avocado oil if you prefer.
